A quick and easy chickpea salad with a cool and creamy tzatziki dressing!

ingredients
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
  • 1 clove garlic, minced/grated
  • 1 tablespoon fresh dill, chopped *
  • 2 tablespoons lemon juice (~1/2 lemon)
  • salt and pepper to taste
  • 2 (15 ounce) cans chickpeas, drained and rinsed.
  • 1/2 cup tomato, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta, crumbled
  • 2 green onions, thinly sliced
directions
  1. Mix the yogurt, shredded cucumber, garlic, dill, and lemon juice before seasoning with salt and pepper to taste.
  2. Toss the remaining ingredients with the tzatziki sauce (from step 1) and enjoy!

Option: Replace 1/4 cup Greek yogurt with 1/4 cup mayonnaise.
Option: Add 2 tablespoons red onion, finely diced.
Option: Add 2 stalks of celery, diced.
Option: * Use any combination of dill, mint, and/or parsley.
Option: Add 1 teaspoon lemon zest.
Option: Make it a tzatziki tuna salad by replacing the 2 cans of chickpeas with 2 (5 ounce) cans tuna, drained!
Option: Add 1 (5 ounce) can tuna, drained.
